Short Discription

easy one pan thai chicken curry with coconut milk recipe. filled with authentic red thai curry flavor, not too spicy, and the coconut milk sauce is to die for! serve with rice for a fast, healthy weeknight dinner.

 

Ingredients of Dish

1 : dried red chili / 6x (for sauce) , 2 : red onion (shallots) / 1x medium (for sauce) , 3 : coriander seed / 1/2tsp (for sauce) , 4 : cumin powder / 1/2tsp (for sauce) , 5 : shrimp paste / 1tbs (for sauce) , 6 : ginger garlic paste / 1tsp (for sauce) , 7 : lemon grass / 50g (for sauce) , 8 : chicken / 300g , 9 : fish sauce / 1tsp , 10 : coconut milk / 500ml , 11 : oil / 80ml , 12 : red chili powder / 1tsp , 13 : sugar / 1tsp , 14 : salt / 1tsp , 15 : cumin powder / 1/2tsp , 16 : coriander powder / 1/2tsp , 17 : bell pepper / 150g , 18 : eggplant / 100g , 19 : basil leaves / 3-4pcs , 20 : ginger garlic paste / 1tsp ,

 

Method of Dish

1: dried red chili, red onion, lemongrass, coriander seeds, cumin powder, shrimp paste, and ginger garlic past pun into blender machine and make a fine paste.
2: put a pan on low heat and add 80ml oil and ginger garlic paste, fry 2min then add chicken and fry 5min more on medium heat. later add 2 tbs curry paste and fry 5min more. after 5min add salt red chili and fish sauce, cook more 5min then add all recommended vegetables. and cook 5min.
3: now time to add coconut milk mix well and cook 7-10min on medium heat and add few sliced basils leaves. done.
