1: Bring a medium saucepan of water to boil. Boil rice noodles 10 minutes, or until soft, and drain.
2: take a large bowl and put all vegetables, boiled chicken, boiled rice noodles, soy sauce, olive oil and mix them well.
3: Fill a large bowl with water. Dip one wrapper into the water for max 30 seconds to soften. Lay wrapper flat. In a row across the center, place vegetable mix. on the wrapper. Fold uncovered sides inward, then gently roll the wrapper. Repeat with the remaining ingredients. done
