Short Discription

chicken biryani is a delicious savory rice dish that is loaded with spicy marinated chicken, caramelized onions, and flavorful saffron rice. for my biryani, i simplify the order of operations, while retaining the traditional layered approach to assembling it.

 

Ingredients of Dish

1 : chicken thighs / 400g , 2 : basmati rice / 500g , 3 : salt / 2tsp , 4 : red chili powder / 2tsp , 5 : whole black pepper / 20pcs , 6 : cinnamon stick / 30g , 7 : star anise / 1x , 8 : cloves / 10pcs , 9 : cardamom / 8pcs , 10 : curry leaves / 3x , 11 : fried onion / 70g , 12 : fresh onion / 1x medium , 13 : tomato / 1x medium , 14 : fresh coriander / 1 bunch , 15 : fresh mint / 1 bunch , 16 : dried red chili / 1x medium , 17 : saffron / few threads ,

 

Method of Dish

1: Boil water in a large pot to make sure rice doesn’t stick, use at least 3l water and 1tbs oil for 400g rice.
2: Heat 80ml oil in a saucepan and cook 1 finely sliced medium onion with recommended spices for 10 mins or till light brown.
3: put the tomato and cook 5 min more, then add 4 chicken, Cook until aromatic.
4: To assemble the biryani, Add 30% rice into the pot and then and then half chicken put on the rice. repeat the second time. and on the top put the rest of rice and dried onion, saffron mix, fresh coriander, fresh mint and cover the pot for 10 min on low heat. done
