Short Discription
Maklouba is a traditional Arabic dish which literally translates as “upside down.” The meat, either chicken or lamb, is cooked together with the rice, giving it a depth of flavor.
1: take a wok and add 400ml oil and put on medium heat.
2: now take an eggplant and make 10mm thick slices and potatoes as well. and
bell pepper cut in a 1inch square shape.
3: first fry the eggplant till brown color and then potatoes as well.
4: now take a pan and add butter, put on medium heat and fry the bell pepper till soften.
5: again put the wok on medium heat and add little oil. and put inside a chopped onion and fry till dark brown color.
6: now add 50g chopped bell pepper and fry 5min more.
7: after that add the chicken and fry 10 min on medium heat. then add all recommended spices. and cook 5min more.
8: now add 500ml water and cover the pot and cook 15min.
9: after 15 min turns off flame and add soaked rice into the wok, mix well and cover the wok and cook on medium heat till 80%. and keep aside the rice.
10: now time to assemble the maklooba.put all vegetables nicely into the pot and then half rice and press with a spoon. then add chicken and then add rest of the rice press gently and cover the pot and cook 10 min more on medium-low heat.
11: take a big plate put on the pot and do upside down and remove the pot gently. done BON APPETIT
